Spinifex Bête Noir 2020

Spinifex Bete Noir is an old-vine Shiraz assembled from seven small family vineyards in the Barossa and Eden valleys.

Growers matter more than sub-regions here, though the eastern foothills, Moppa and Moculta all have a say, and the vines range from 25 to 120 years old with roughly 60 as the average. All the fruit was hand-picked. Whole clusters went in at whatever rate each site suggested, landing near 35 per cent overall, and fermentation ran on indigenous yeast. Elevage lasted twenty months on lees in French oak of every size from 225 to 2,500 litres, a quarter of it new, and the wine was bottled without filtration. Pete Schell's blending is the real craft in this bottle.

Old-school Barossa in shape: plum, blackberry, iron and a soy-like savouriness over supple tannin, with real length. Serve at 17 degrees after a short decant. Roast beef, slow-cooked lamb, or a plate of charcuterie and pickles.
