Spinifex Dominion Shiraz 2019

Spinifex Dominion Shiraz is a single-vineyard Barossa Shiraz from ancient vines at Vine Vale.

Bought in 2018, the Dominion vineyard became the second estate holding after Rostein in the Eden Valley, and it sits almost exactly in the middle of the Barossa. Of its four hectares, 0.8 is planted to Shiraz dating from 1918, with two further parcels from the mid-1990s. Low winter rain and a dry season in 2019 pushed yields below 15 hectolitres per hectare, giving tiny, tannic, concentrated berries. Hand-picked in late February, chilled overnight, then fermented wild with 30 per cent whole clusters and the rest as uncrushed berries over twelve days, with minimal extraction. Two 500-litre puncheons, eighteen months, unfiltered.

Black plum and cherry, dark chocolate, graphite and a touch of new leather, with power that never turns heavy and tannin you barely notice. Serve at 17 degrees. Roast beef, lamb shoulder, or a mushroom and beef pie.
