Spinifex Esprit 2021

Spinifex Esprit is a Mataro-led Barossa blend with Cinsault, Grenache and a splash of Shiraz.

The composition shifts every year, and the 2021 reads 41 per cent Mataro, 35 Cinsault, 21 Grenache and 3 Shiraz, which is a lot of Cinsault by any measure and shows in the perfume. Eight old vineyards contribute, principally around Ebenezer, Williamstown and Bethany, with vines from 75 to over 150 years old, dry-grown and minimally handled. Parcels fermented wild, macerating between eight and twenty days, with whole clusters used only for the Grenache. Maturation split between well-seasoned 600- and 1,200-litre barrels and stainless steel. The Barossa Burgundy tag it has carried since 2001 still fits.

Fragrant and light on its feet, with raspberry, rosehip, dried herbs and a gently earthy close over supple tannin. Serve at 15 to 16 degrees. Roast chicken, a lamb and chickpea stew, or grilled vegetables with labneh.
