Spinifex Lola 2020

Spinifex Lola is a Semillon-led Barossa white blend with Clairette and Ugni Blanc.

Semillon returns to the front in 2020 at 60 per cent, with 20 per cent Clairette and Ugni Blanc making up the balance, the latter replacing the Viognier and Vermentino of earlier releases and pushing the wine towards freshness and texture over aromatics. Three old-vine Semillon sites, aged 60, 70 and 90 years, sit at Ebenezer, in the foothills near Bethany and on the valley floor near the Para River. Everything was hand-picked and chilled, macerated between two and twenty-four hours, wild-fermented in old French barriques, puncheons and stainless steel, then held ten months on lees.

Lean and saline, with lemon, green apple, chalk and a dry, textural finish. Serve cold, around 10 to 11 degrees. Oysters, grilled whiting, or a plate of prosciutto and green olives all suit it well.
