Spinifex Rosé 2021

Spinifex Rosé is a dry Barossa Valley rosé built from Grenache, Mataro, Shiraz and Cinsault.

Grenache leads the 2021 at just over half, with Mataro at 30 per cent, Shiraz at 16 and a trace of Cinsault. All the vines are dry-grown and mostly bush-trained, averaging 50 years of age, with the oldest parcels reaching about 90. Fruit was hand-picked and chilled overnight, then crushed bunches sat on skins for somewhere between six and 24 hours before pressing. Wild yeast handled the ferment, almost all of it in tank with five per cent going into old French demi-muids. The wine matured on lees and went to bottle without filtration. It is made as a wine in its own right, not an afterthought.

Pale, dry and gently textured, with red currant, grapefruit pith and a stony finish. Serve at 8 to 10 degrees. It works with grilled prawns, a salade niçoise or a bowl of olives and jamón on a hot afternoon.
