Spinifex Tabor 2009

Spinifex Tabor is a Barossa Valley red built on Mataro, now well into bottle age.

Mataro, or Mourvèdre if you prefer the French name, has grown in the Barossa for well over a century, and the old dry-grown bush-vine plantings scattered through the valley are the region's quiet treasure. Pete Schell has worked with them since founding Spinifex in 2001, favouring gentle extraction, large-format seasoned oak and as little intervention as the fruit allows. This 2009 is a mature release from that approach, and at this age the variety's firm tannin and savoury, gamey side have had plenty of time to settle. Bottles this old are a matter of luck and cellar space.

Aged Mataro heads towards leather, dried fig, earth and tobacco leaf, with the tannin softened and the fruit drawn inward. Serve at 16 to 18 degrees and decant it. Match it with braised oxtail, a slow ragù or hard aged cheese.
