Description

Spinifex Vermentino is a skin-fermented Barossa white from a single acre at Koonunga Hill.

The site is one of the highest points at Koonunga Hill in the far north of the Barossa, on hard, ironstone-rich soil, and it covers about an acre. Vermentino is a tough, hardy variety, and Pete Schell finds it ripens slowly here, keeping acid while building texture. Whole bunches were cooled overnight then sealed into a small stainless tank for a natural ferment lasting 12 days before pressing, a carbonic approach applied to a white grape, which Schell likes for the aromatic frequency and the grip it brings. Malolactic was blocked, and the wine rested 10 months on full lees in old wood before bottling unfiltered.

Aromatically wide, with lemon oil, bitter herb and a tannic tug from the skins. Dry, textural and long. Serve at 10 to 12 degrees. It handles fritto misto, grilled sardines or pasta with bottarga.
