Sylvain Pataille Bourgogne Aligoté Champ Forey 2021

Sylvain Pataille Bourgogne Aligoté Champ Forey is made from 0.3 hectares of Aligoté Doré vines planted between 1932 and 1961.

Sylvain Pataille has done more than anyone to argue that Aligoté deserves to be treated as a serious Burgundian variety rather than a bystander, and he bottles several parcels of it separately from his base in Marsannay-la-Côte. Champ Forey is one of them, a lieu-dit where he farms just 0.3 hectares of ancient vines of the Aligoté Doré selection, planted between 1932 and 1961. The vines sit at 250 metres and face east on gravelly limestone soils, a cool exposure that preserves the variety's natural acidity. The wine ferments chiefly in used casks, with only 15% new oak, and ages for a year before bottling, which gives it a little breadth without covering the citrus and chalky character of the site.

Taut and refreshing, it drinks well now and over the next four or five years; serve with oysters, grilled sardines or gougères at 10-12°C.
