Description
Sylvain Pataille Bourgogne Rouge blends just over a hectare of parcels in Marsannay and the Hautes Côtes, and has been called one of the best Bourgogne Rouges in Burgundy by Rajat Parr.
Pataille's first red is assembled from several small holdings, with plenty of old vines in the mix, including one parcel planted in 1956. Each parcel is vinified separately, with different maceration approaches according to the fruit, before the components are blended; the final wine usually includes about 30 per cent whole bunches. It ages in barrel for a year and is not touched by sulphur until bottling, which is consistent with the low-intervention approach across the domaine. Bourgogne Rouge is the regional appellation covering the whole of Burgundy, and wines at this level rarely carry old-vine material from the Côte de Nuits, which is what gives this bottling its unusual depth for the category.
Ready on release and best drunk over three or four years; serve at 16–18°C, lightly chilled if you like, with charcuterie, roast chicken or mushroom tart.
