Braised Lamb Shank
Ingredients:
- 4 lamb shanks
- 2 tbsp olive oil
- 1 onion, diced
- 2 carrots, sliced
- 3 garlic cloves, minced
- 1 cup red wine
- 2 cups beef stock
- 2 tbsp tomato paste
- 1 tsp rosemary
- Salt and pepper, to taste
Instructions:
- Season lamb shanks with salt and pepper. Heat olive oil in a large pot and brown shanks on all sides. Remove and set aside.
- Sauté onion, carrots, and garlic until softened. Stir in tomato paste and rosemary.
- Deglaze the pot with red wine and reduce slightly. Add beef stock and return the lamb shanks to the pot.
- Cover and simmer for 2-3 hours until the meat is tender and falling off the bone.
- Serve with mashed potatoes or polenta.
