Recipe

Braised Lamb Shank

Ingredients:

  • 4 lamb shanks
  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 3 garlic cloves, minced
  • 1 cup red wine
  • 2 cups beef stock
  • 2 tbsp tomato paste
  • 1 tsp rosemary
  • Salt and pepper, to taste

Instructions:

  1. Season lamb shanks with salt and pepper. Heat olive oil in a large pot and brown shanks on all sides. Remove and set aside.
  2. Sauté onion, carrots, and garlic until softened. Stir in tomato paste and rosemary.
  3. Deglaze the pot with red wine and reduce slightly. Add beef stock and return the lamb shanks to the pot.
  4. Cover and simmer for 2-3 hours until the meat is tender and falling off the bone.
  5. Serve with mashed potatoes or polenta.
