Tenuta del Cerro Còlpetrone Memoira Montefalco Sagrantino DOCG is a bold and structured expression of Sagrantino, one of Italy’s most powerful red wines. Deep ruby red in colour, this wine is known for its intense tannic concentration, particularly in its youth. It offers complex aromas of blackberries, plums, and dried cherries, complemented by notes of spice, dark chocolate, and tobacco. Aged for 12 months in French oak barrels and an additional 6 months in bottle, it develops a refined balance between its richness and freshness.
Decisive and full-bodied, this Sagrantino is best served in large glasses at 18°C, allowing its structure and complexity to fully emerge. A perfect match for roasted red meats, rich and elaborate dishes, and aged cheeses, it is a wine built for long aging and deep appreciation.

Stracotto di Manzo al Sagrantino (Slow-Braised Beef in Sagrantino Wine)
Ingredients:
- 1kg beef chuck, cubed
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 carrot, finely chopped
- 2 celery stalks, chopped
- 2 cups Sagrantino wine (preferably Còlpetrone Memoira)
- 2 cups beef stock
- 2 tbsp tomato paste
- 1 sprig rosemary
- Salt and black pepper, to taste
Instructions:
- Heat olive oil in a large pot over medium heat. Sear the beef on all sides until browned, then remove and set aside.
- Sauté the onion, garlic, carrot, and celery in the same pot until softened.
- Add the tomato paste and stir for 2 minutes to develop flavour.
- Deglaze the pot with Sagrantino wine, scraping up any browned bits.
- Return the beef to the pot and pour in the beef stock. Add rosemary, salt, and pepper.
- Cover and simmer for 3-4 hours until the meat is tender and the sauce is rich.
- Serve with polenta or mashed potatoes.
Tip: Let the dish rest for 10 minutes before serving to allow the flavours to develop fully.
