Stuffed Bell Peppers
Ingredients:
- 4 large bell peppers
- 1 cup cooked rice
- 1 cup marinara sauce
- 200g ground beef or lentils for vegetarian option
- 1/2 cup Parmesan cheese, grated
- 1 onion, diced
- 2 garlic cloves, minced
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions:
- Preheat oven to 180°C (350°F). Cut the tops off the peppers and remove seeds.
- Sauté onion and garlic in olive oil until softened. Add ground beef or lentils and cook until browned.
- Mix cooked rice, marinara sauce, and Parmesan into the beef or lentil mixture. Season with salt and pepper.
- Stuff the mixture into the peppers and place in a baking dish. Cover with foil and bake for 30 minutes.
- Remove foil and bake for an additional 10 minutes. Serve warm.
