Filetto di Maiale con Riduzione di Frutti Rossi (Pork Tenderloin with Red Fruits)
Ingredients
- 600g pork tenderloin (filetto di maiale)
- Sea salt and freshly ground black pepper
- 2 tbsp extra virgin olive oil
- For the red berry reduction:
- 200g mixed red berries (such as raspberries, strawberries, and blackberries)
- 50ml red wine
- 1 small cinnamon stick
- 1/4 tsp vanilla extract
- 1 tbsp honey
- Juice of 1/2 lemon
- Optional: A handful of fresh herbs (such as basil or mint) for garnish
Instructions
- Preheat your oven to 180°C.
- Season the pork tenderloin generously with salt and pepper. Heat the olive oil in an ovenproof skillet over medium-high heat and sear the pork on all sides until golden.
- Transfer the skillet to the preheated oven and roast the pork for 15-20 minutes, or until the internal temperature reaches about 63°C for a tender, medium finish. Remove from the oven and let rest for 5 minutes before slicing.
- Meanwhile, prepare the red berry reduction. In a small saucepan, combine the mixed berries, red wine, cinnamon stick, vanilla extract, honey, and lemon juice. Simmer over medium heat for 8-10 minutes until the berries break down and the sauce thickens slightly.
- If desired, strain the sauce through a fine sieve for a smoother texture.
- Slice the pork tenderloin and arrange on a serving platter. Drizzle the warm red berry reduction over the slices and garnish with fresh herbs if using.
