Thomas Wines Elevage Semillon 500ml 2022

Thomas Wines Elevage Semillon is a sweet Hunter Valley dessert wine in a 500ml bottle.

This is the second release of a dessert-style Semillon from the Hunter. The fruit source is unusual: the mid-pressings from all of Andrew Thomas's 2022 Semillon, the fraction that carries the phenolic structure needed to balance sweetness. The juice went through a long, cool fermentation, which Thomas stopped at around 11 per cent alcohol, leaving roughly 120 to 130 grams per litre of residual sugar. Everything was raised in stainless steel, so the fruit stays clean and nothing woody gets in the way. It is an opulent style that still manages to taste pristine.

Orange blossom and citrus juice with elderflower and honey behind, luscious through a long finish and kept in balance by citrus-like acid. Serve at 8 degrees in a small glass. Good with a light fruit tart, or better still, a wedge of blue cheese.
