Thomas Wines Sweetwater Shiraz 2021

Thomas Wines Sweetwater Shiraz is a perfumed Hunter Valley Shiraz drawn from a single limestone-based site.

Belford, in the northern reaches of the Lower Hunter, is limestone country under red-brown loam, and the 1998 plantings there are the source of everything in this bottle. The grapes were destemmed but left uncrushed, given two days cold before whole-berry fermentation kicked off, and pressed after ten days on skins to French hogsheads ranging from new to three years old. Fifteen months later the best barrels were blended, and the wine then sat a further eleven months in bottle. Andrew Thomas pitches his reds in what people once called the Hunter Burgundy style: perfumed, supple, balanced, medium-weighted.

Silky and seductive, dark brooding fruit with pepper, wet steel and an anise lift, plum sweetness through a velvety middle. Serve at 16 degrees. Works with beef bourguignon, roast duck or mushrooms on toast with thyme.
