Thomas Wines Synergy Shiraz 2020

Thomas Wines Synergy Shiraz is a Hunter Valley Shiraz blended from several estate blocks.

What goes in is declassified fruit from the same vineyards that supply the single-vineyard reds: in 2020, Pokolbin Estate, Sweetwater and the Motel Block. Andrew Thomas rates the season as one of the best he has bottled at this level. Each parcel got a cold soak of one to two days, fermented in stainless steel, then went to barrel to finish malolactic conversion. Maturation was in older French oak for fourteen to fifteen months, which means structure without new-oak sweetness. Hunter Shiraz in this house style runs medium-bodied and perfumed, and the cheaper wines are not made to a different recipe.

Blue fruit and spice, supple through the middle, with tannins that stay out of the way. Serve at 15 to 16 degrees, or slightly cool on a warm evening. Sausages off the barbecue, lamb kofta or a mushroom pizza will do nicely.
