Thomas Wines Synergy Shiraz 2021

Thomas Wines Synergy Shiraz is a medium-bodied Hunter Valley Shiraz drawn from five vineyards.

Five blocks feed the 2021: the Kiss and Dam sections of Pokolbin Estate, Sweetwater, Ridgeview and Cote D'Or. All of them also contribute to wines further up the range, and what lands here is the fruit set aside from those. Each parcel was cold-soaked for a day or two, fermented in stainless steel, then racked to barrel for malolactic and left in older French oak for fourteen to fifteen months. At 13.5 per cent alcohol it stays on the lighter side of the Australian Shiraz spectrum, which is exactly where the Hunter has always been most convincing.

Svelte blue fruit with lifted spice and supple tannin, concentrated but easy to drink. Serve at 15 to 16 degrees. Pork chops, roast chicken with thyme or a bowl of pasta with lamb ragu all work, and it will not argue with a second glass.
