Recipe

Zucchini Fritters

Ingredients:

  • 2 medium zucchinis, grated
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1 egg, beaten
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions:

  1. Squeeze excess moisture from grated zucchini using a clean towel.
  2. In a bowl, mix zucchini, Parmesan, breadcrumbs, egg, salt, and pepper.
  3. Form small patties and heat olive oil in a skillet over medium heat.
  4. Cook fritters for 2-3 minutes per side until golden brown. Serve warm.

Tip: Pair with a dollop of sour cream or a lemony yoghurt sauce.
