Ratatouille

Ingredients:

  • 1 eggplant, diced
  • 1 zucchini, sliced
  • 1 red capsicum, chopped
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 cups tomato passata
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper, to taste

Instructions:

  1. Heat olive oil in a large pan. Sauté onion and garlic until softened.
  2. Add eggplant, zucchini, and capsicum. Cook until slightly tender.
  3. Stir in tomato passata, thyme, salt, and pepper. Simmer for 20-25 minutes.
  4. Serve warm, garnished with fresh parsley or basil.

Tip: Pair with crusty bread for a hearty, satisfying meal.
