Description
Toolangi Vineyard Chardonnay is an estate-grown Yarra Valley Chardonnay from Dixons Creek.
Fruit came off the A, B and G blocks, then eighteen years old and planted to I10V3 and Mendoza, hand-picked and pressed with full solids straight into French puncheons with a tenth new oak. Malolactic conversion was blocked, and the wine sat ten months on lees in barrel before bottling. That was Kaspar Hermann's second harvest at the property; he arrived from Mount Mary and set about letting the site speak instead of imposing a house style. The vineyard has been in the ground since 1995, on fine clay loam against the Toolangi State Forest, and crops low without being pushed.
Pink grapefruit drives it, with unexpected intensity for the money and a long, dry finish. Serve at 11 to 12 degrees. White fish, roast chicken or a pea and parmesan risotto suit it, and heavy sauces are best left aside.
