Toolangi Vineyard Chardonnay 2021

Toolangi Vineyard Chardonnay is an estate Chardonnay grown on clay loam in the Yarra Valley.

A prolonged, classical 2021 in the Yarra gave long hang times and detailed flavour, with picking here spread over three days in late March. The bunches went whole into the press and the juice straight to French barriques, puncheons, a foudre and a ceramic egg for primary fermentation, a tenth of the wood new. Only ten per cent of the blend was allowed through malolactic conversion and the lees were left undisturbed. Ten months later it was bottled. Dixons Creek sits at the cooler end of the Yarra Valley, and this vineyard, planted in 1995, has the forest at its back.

Lemon and white fruit, a flick of reduction, chalky freshness and steely acid running the length of it. Serve at 12 degrees. Oysters, grilled flathead or a wedge of gruyere will all sit well beside it.
