Toolangi Vineyard D Block Shiraz 2021

Toolangi Vineyard D Block Shiraz is a cool-climate Syrah from one parcel of old Australian-clone vines in the Yarra Valley.

Rows here run north to south, which gives this parcel of twenty-five-year-old vines good sun exposure through the day. PT23 is the clone, an old Australian selection on Paulsen rootstock, planted on silty clay loam. Kaspar Hermann keeps new oak away from his Shiraz, leaning instead on the spice already in the fruit and a measured proportion of whole bunches; the wine then goes into large seasoned foudres, where a more reductive environment compresses the tannins and builds what he calls a spring through the core. The cooler 2021 season took fifteen per cent bunches and ten months in wood.

Piquant and powerfully flavoured, sappy dark berries with pepper spice, a richly weighted middle and driving acidity. Serve at 16 degrees. Good with lamb shoulder, grilled quail or a dish of braised lentils and chorizo.
