Toolangi Vineyard F Block Chardonnay 2019

Toolangi Vineyard F Block Chardonnay is a single-block Yarra Valley Chardonnay from the highest vines on the property.

The highest parcel on the property is planted to Gin Gin, eighteen years old when this was made, and it has long been picked out as the best Chardonnay ground Toolangi has. Fruit was crushed and pressed directly to barrel with full solids, thirty-five per cent of the wood new, and primary fermentation ran on wild yeast. Malolactic conversion was avoided entirely this year; the lees were stirred for the first six months and the wine spent ten months in barrel before bottling. Height matters here, since the top of the block is cooler and stonier, and the acid arrives in the winery intact.

Intense and tightly wound, citrus and white peach with a flinty edge and a long, chalky finish. Serve at 12 degrees, not colder. Roast chicken, scallops or a wedge of comte; it has the structure to age for years.
