Toolangi Vineyard F Block Chardonnay 2021

Toolangi Vineyard F Block Chardonnay is a Gin Gin clone Chardonnay from a small high block in the Yarra Valley.

Picking came early in 2021, on 27 February, off nineteen-year-old Gin Gin vines at the top of the vineyard where the soil thins out and turns rocky. Whole bunches went to press with full solids and straight into oak, a quarter of it new. Wild yeast handled primary fermentation and a partial malolactic, and the wine then sat ten months on lees with no stirring at all, since Kaspar Hermann is sparing with batonnage in cooler years and prefers the texture to build on its own. The forest behind the block keeps this corner of Dixons Creek several degrees cooler than the valley floor.

Powerful and layered, nectarine and flinty salinity, chalky phenolics and a whip of acid through a long finish. Serve at 12 to 13 degrees. Roast chicken, lobster with butter or a plate of aged comte; cellar it five to ten years without worry.
