Toolangi Vineyard F Block Chardonnay 2022

Toolangi Vineyard F Block Chardonnay is the estate's top Chardonnay, from one sheltered plot at Dixons Creek.

A small plot in the highest, easternmost corner of the eleven-hectare vineyard, sheltered by the state forest to the north-east and by a hill that throws afternoon shade from the south. That shelter preserves the natural acidity a site this powerful needs. Shallower, rockier ground here than further down the slope, with a higher proportion of white clay, and Kaspar Hermann puts the wine's sculpted, chalky character down to that. Yields rarely exceed seven or eight barrels and poor flowering in 2022 left him five. Bunches were pressed to oak with full solids, twenty per cent new, sixty per cent went through malolactic, nine months on lees.

Floral-edged stone fruit with wispy reduction and warm spice, the palate fleshy, salty and structured, the finish coiled and chalky. Serve at 12 to 13 degrees. Roast poultry, crab linguine or a slice of raclette; a decade in the cellar is well within reach.
