Toolangi Vineyard F Block Chardonnay 2023

Toolangi Vineyard F Block Chardonnay is a single-block Yarra Valley Chardonnay under wax and DIAM cork.

Kaspar Hermann prunes this block himself, which tells you how highly he rates it: a small parcel at the top of the vineyard on shallow, rocky ground with white clay through it, planted to twenty-one-year-old Gingin vines that give thick-skinned fruit and plenty of phenolic grip. A wet spring in 2023 made life difficult, but the harvest window turned mild and the fruit came in ripe. Bunches went to barrique, a fifth new, for spontaneous fermentation with full solids; malolactic ran to completion and no sulphur was added until bottling. A white wax cap sits over the DIAM cork.

Tense and energetic, grapefruit and barrel spice, seamless in the mouth and driven through a long finish. Serve at 12 degrees. Grilled crayfish, chicken with tarragon or a well-aged gruyere; it has plenty of years ahead of it.
