Description
Toolangi Vineyard F Block Chardonnay is a wild-fermented Chardonnay from the highest vines at Dixons Creek.
Two things define this parcel: height, as the highest point on the eleven-hectare property, and shelter, with state forest on one side and a hill casting afternoon shade on the other. Both help hold acidity on a site that ripens to real power. Gingin vines, twenty-one years old, sit on shallow rocky soil with white clay through it. The 2024 season brought regional charm and a fuller ripeness than the couple before it. Hand-picked and whole-bunch pressed into barriques with twenty per cent new oak, the wine fermented on wild yeast with about a third going through malolactic.
Ripe and mineral at once, yellow peach and citrus pith over a chalky, saline core. Serve at 12 to 13 degrees. Roast pork with fennel, scallops or a mushroom tart; drink it now or hold it ten years.
