Toolangi Vineyard Pauls Lane Chardonnay 2021

Toolangi Vineyard Pauls Lane Chardonnay is a single-parcel Chardonnay from D Block at Dixons Creek.

Twenty rows of D Block, planted in 1995 to I10V3 and Gingin, were hand-picked on 27 February in a long, classic Yarra season. The bunches went whole to press and the juice into barriques and puncheons with a fifth new oak for fermentation. No malolactic conversion was allowed, and the wine matured for ten months without lees contact, a stripped-back approach that leaves the acid line exposed and the fruit doing the work. Toolangi sits on fine clay loam in Dixons Creek, backing onto the state forest, and crops low across all three of its varieties.

Dense and racy at once, pear and nectarine with a yellow-jube sweetness, nutty depth and a powdery, clean close. Serve at 12 degrees. Roast pork, crab pasta or a plate of cheddar and apple all work well here.
