Toolangi Vineyard Pinot Noir 2021

Toolangi Vineyard Pinot Noir is an estate-grown Yarra Valley Pinot Noir from Dixons Creek.

Twenty-year-old MV6 vines, cropped low on fine clay loam, provide the fruit. Almost all of it was destemmed to whole berries, with five per cent left as bunches, and after a short cold soak the ferment ran fourteen days on skins. Pressing went to French oak with just five per cent new, where malolactic conversion took place, and the wine stayed ten months on lees in barrel. The property was planted in 1995 and runs to eleven hectares against the Toolangi State Forest, which is about as cool a corner as the Yarra Valley offers.

Red cherry and raspberry with a light savoury frame, supple tannin and clean, unforced acidity. Serve at 14 degrees, lightly chilled if the day is warm. Roast chicken, salmon or a plate of charcuterie; easy drinking without being remotely simple.
