Description
Toolangi Vineyard Shiraz is a cool-climate Yarra Valley Shiraz from Dixons Creek.
Rows one to ten of the A1 and D1 blocks were hand-harvested for this. Ten per cent went in as whole bunches and the rest as whole berries, fermenting naturally in a mix of open and closed vessels, and the wine then spent ten months in French oak on lees. The vineyard has been planted since 1995 on fine clay loam in Dixons Creek, up against the Toolangi State Forest, and the Shiraz here is grown for freshness and perfume more than for weight.
Peppery and medium-bodied, with dark berry, dried herb and fine tannin. Serve at 16 degrees. Lamb cutlets, sausages with mash or grilled eggplant; it has more in common with the northern Rhone than with warmer Australian Shiraz.
