Toro Albala Don PX Gran Reserva 375ml 1999

Toro Albala Don PX Gran Reserva is a single-vintage Pedro Ximénez from Montilla-Moriles, released only from lots the house sets aside for decades of cask ageing.

Montilla-Moriles lies inland from Jerez in the province of Cordoba, where albariza soils and fierce summers ripen Pedro Ximenez to sugar levels no other Spanish region reaches; the grapes are then sun-dried on mats before pressing, which concentrates them further. Toro Albala works from Aguilar de la Frontera and holds one of the deepest reserves of old vintage wine in Andalucia. For the Don PX Gran Reserva, select lots from the best years are filled into oak barrels, which are sealed and left in their single-vintage state rather than being refreshed through a solera. Decades of slow, controlled contact with oxygen carry the wine through its rancio transformation, building nutty, iodine-tinged savour alongside the raisined sweetness and lending an impression of freshness unusual in a wine this rich. It is bottled at 17% alcohol in a 375ml half-bottle.

Ready on release and effectively indestructible once opened, this will keep in the fridge for months. Serve at 8-10°C in a small glass with blue cheese, dark chocolate desserts, or simply poured over vanilla ice cream.
