Bistec con Pimientos del Piquillo (Steak with Piquillo Peppers)
Ingredients:
- 2 steaks (your choice of cut, such as rib-eye or sirloin)
- 2 tbsp olive oil
- 2 garlic cloves, minced
- 1/2 onion, chopped
- 1 can (200g) Piquillo peppers, drained and sliced
- 1/2 cup red wine
- 1 tbsp balsamic vinegar
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions:
- Season the steaks generously with salt and pepper. Heat 1 tbsp of olive oil in a large skillet over medium-high heat. Once hot, add the steaks and cook to your desired doneness (about 4-5 minutes per side for medium-rare, depending on thickness). Remove the steaks from the skillet and set aside to rest.
- In the same skillet, add the remaining 1 tbsp olive oil. Add the minced garlic and chopped onion and sauté for about 3-4 minutes until softened and fragrant.
- Add the sliced Piquillo peppers to the skillet and cook for another 2 minutes, stirring occasionally. Pour in the red wine and balsamic vinegar, scraping up any browned bits from the bottom of the pan. Let the sauce simmer for 3-4 minutes, allowing it to reduce and thicken slightly.
- Return the steaks to the skillet, spoon the Piquillo pepper sauce over the steaks, and let everything cook together for an additional 2-3 minutes, ensuring the steaks are heated through and coated with the sauce.
- Serve the steaks with the Piquillo pepper sauce spooned over the top. Garnish with fresh parsley, if desired.
