Tiella Barese (Baked Rice and Potatoes with Mussels)
Ingredients:
- 300g Arborio rice
- 1kg fresh mussels, cleaned and scrubbed
- 2 medium potatoes, thinly sliced
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 cup white wine
- 2 tbsp olive oil
- 1 tbsp fresh parsley, chopped
- Salt and pepper, to taste
- 1 lemon, sliced (for garnish)
- 1 cup tomato passata
Instructions:
- Preheat the oven to 180°C.
- In a large pan, heat the olive oil over medium heat. Sauté the onion and garlic until softened, about 4 minutes.
- Add the tomato passata and white wine to the pan, simmering for 10 minutes until slightly reduced.
- In a greased baking dish, layer the sliced potatoes at the bottom, followed by half the cooked rice, and then the mussels. Season with salt, pepper, and parsley. Repeat with the remaining rice and potatoes, layering them evenly.
- Pour the sauce over the layers in the baking dish, then cover tightly with foil.
- Bake for about 40–45 minutes, or until the potatoes are tender and the mussels have opened.
- Remove from the oven, garnish with fresh parsley and lemon slices, and serve hot.
