Pollo al Limone e Rosmarino (Lemon & Rosemary Chicken)
Ingredients:
- 4 chicken breasts, skin-on
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1 lemon, sliced thinly
- 2 tbsp fresh lemon juice
- 2 tsp fresh rosemary, chopped
- Salt and freshly ground black pepper, to taste
- 1/4 cup dry white wine (optional)
Instructions:
- Preheat oven to 200°C.
- In a large ovenproof skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute until fragrant.
- Season chicken breasts with salt and pepper. Sear chicken in the skillet for 3-4 minutes per side until golden brown.
- Remove skillet from heat. Arrange lemon slices over and around the chicken. Sprinkle rosemary and drizzle with lemon juice (and white wine if using).
- Transfer skillet to the oven and roast for 15-20 minutes, until chicken is cooked through and juices run clear.
- Remove from oven, let rest for 5 minutes, and serve with roasted vegetables or a light salad.
