Insalata di Mare alla Maremma (Tuscan Coastal Seafood Salad)
Ingredients:
- 300 g squid, cleaned and cut into rings
- 200 g prawns, peeled and deveined
- 200 g mussels, scrubbed and debearded
- 200 g clams, cleaned
- 3 tbsp extra virgin olive oil
- 1 lemon, juiced
- 1 small garlic clove, finely minced
- 1 tbsp fresh parsley, chopped
- Salt and freshly ground black pepper, to taste
Instructions:
- Bring a large pot of salted water to a gentle boil. Add the squid and cook for 2 minutes, then add prawns, mussels, and clams. Cook until prawns turn pink and shellfish open, about 4–5 minutes. Discard any unopened mussels or clams.
- Drain and allow the seafood to cool slightly.
- In a large bowl, whisk together olive oil, lemon juice, garlic, salt, and pepper.
- Add the seafood to the bowl and toss gently to coat.
- Sprinkle with fresh parsley and let the salad rest for 15 minutes before serving to absorb the flavours.
