Beef Short Ribs
Ingredients:
- 1kg beef short ribs
- 2 tbsp olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 cup red wine
- 2 cups beef stock
- 1 tbsp tomato paste
- Salt and pepper, to taste
Instructions:
- Preheat oven to 160°C. Season short ribs with salt and pepper.
- Heat olive oil in a large pan and sear ribs until browned. Remove and set aside.
- Sauté onion and garlic until softened. Stir in tomato paste, red wine, and beef stock.
- Return ribs to the pan, cover, and bake for 2.5-3 hours until tender.
- Serve hot with mashed potatoes or crusty bread.
Tip: Garnish with fresh rosemary for a fragrant finish.
