Risotto al Tartufo (Truffle Risotto)
Ingredients:
- 1 cup Arborio rice
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 1/2 cup dry white wine
- 4 cups chicken or vegetable broth, kept warm
- 50g Parmesan cheese, grated
- 2 tbsp truffle oil
- Salt and pepper, to taste
- Fresh truffle shavings (optional)
Instructions:
- Heat the olive oil in a large pan over medium heat. Add the chopped onion and cook until softened.
- Add the rice and cook for 1–2 minutes until it starts to lightly toast.
- Pour in the white wine and stir until it is absorbed by the rice.
- Begin adding the warm broth, one ladle at a time, stirring frequently until the liquid is absorbed before adding more. Continue until the rice is creamy and cooked to your liking (around 18-20 minutes).
- Stir in the Parmesan cheese and truffle oil. Season with salt and pepper.
- Serve topped with fresh truffle shavings, if desired. Enjoy with a glass of Uccelliera Rosso di Montalcino for a true Tuscan experience.
