Spaghetti alle Vongole (Spaghetti with Clams)
Ingredients:
- 400g spaghetti
- 1.2kg fresh vongole (clams)
- 5 tbsp extra virgin olive oil
- 4 garlic cloves, lightly crushed
- ½ tsp red chilli flakes (optional)
- 150ml dry white wine
- 1 large handful flat-leaf parsley, finely chopped
Instructions:
- Soak the clams in cold salted water for 1–2 hours to remove any sand, then rinse thoroughly and discard any that remain open.
- Cook the spaghetti in a large pot of well-salted boiling water until al dente.
- Meanwhile, heat the olive oil in a wide pan over medium heat and gently sauté the garlic and chilli flakes until fragrant.
- Add the clams and white wine, cover with a lid and cook for 4–6 minutes until the clams open. Discard any that remain closed.
- Remove the garlic cloves, then add the drained spaghetti directly to the pan.
- Toss well to coat the pasta in the clam juices and olive oil.
- Finish with most of the parsley and toss again before serving.
- Serve immediately with the remaining parsley sprinkled over the top.
The briny sweetness of the clams and delicate olive oil sauce beautifully complement Verdicchio’s citrus freshness and mineral character, making this one of the classic food pairings of Italy’s Adriatic coast.
