Brodetto di Pesce Marchigiano (Marche-Style Seafood Stew)
Ingredients:
- 500g mixed seafood (prawns, mussels, calamari, white fish)
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 red capsicum, diced
- 400g canned tomatoes, crushed
- 1 cup dry white wine
- 1 cup fish stock
- 1 tbsp fresh parsley, chopped
- Salt and pepper, to taste
- Crusty bread, for serving
Instructions:
- Heat olive oil in a large pot over medium heat. Sauté the onion, garlic, and capsicum until soft.
- Add the white wine and let it reduce for a few minutes.
- Stir in the canned tomatoes and fish stock, then season with salt and pepper.
- Simmer for 15 minutes to allow the flavours to meld.
- Add the seafood and cook for 5-7 minutes, until the mussels open and the fish is cooked through.
- Sprinkle with fresh parsley and serve with crusty bread.
Tip: For a richer flavour, add a splash of Velenosi Rosé to the broth before serving.
