Risotto agli Asparagi (Asparagus Risotto)
Ingredients:
- 1 ½ cups Arborio rice
- 500g asparagus, trimmed and cut into pieces
- 1 small onion, finely chopped
- 3 tbsp olive oil
- ½ cup dry white wine (preferably Offida Pecorino DOCG)
- 4 cups vegetable stock, kept warm
- ½ cup grated Pecorino Romano
- 2 tbsp unsalted butter
- Salt and pepper, to taste
Instructions:
- Heat olive oil in a pan over medium heat. Sauté the onion until translucent.
- Add Arborio rice and toast for 1-2 minutes, stirring frequently.
- Pour in the white wine, stirring until absorbed.
- Add warm vegetable stock, one ladle at a time, stirring constantly and allowing each addition to absorb before adding the next.
- When the rice is nearly cooked (about 15 minutes), stir in the asparagus pieces.
- Continue adding stock until the rice is creamy and cooked al dente.
- Remove from heat, stir in butter and Pecorino Romano, then season with salt and pepper.
- Let rest for 2 minutes before serving.
Tip: Garnish with lemon zest for a fresh citrus lift.
