Lasagne al Ragù (Lasagne with Meat Sauce)
This classic Italian comfort food, featuring layers of pasta, rich meat sauce, and creamy béchamel, is a perfect match for Villa Raiano Aglianico IGT, complementing its bold flavours and structured tannins.
Ingredients (Serves 6):- 12 lasagne sheets
- 500g beef mince
- 1 onion, finely chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 3 garlic cloves, minced
- 400g canned diced tomatoes
- 2 tbsp tomato paste
- 1 cup red wine
- 1 cup beef stock
- 50g Parmesan cheese, grated
- 500mL béchamel sauce
- Salt and pepper, to taste
- Olive oil, for cooking
- Prepare the Ragù: Heat olive oil in a large pan over medium heat. Sauté the onion, carrots, celery, and garlic until softened. Add the beef mince and cook until browned. Stir in the red wine, allowing it to reduce slightly, then add the canned tomatoes, tomato paste, and beef stock. Simmer for 30 minutes, seasoning with salt and pepper.
- Assemble the Lasagne: Preheat the oven to 180℃. In a greased baking dish, spread a thin layer of ragù. Add a layer of lasagne sheets, followed by ragù, béchamel, and Parmesan. Repeat the layers, finishing with béchamel and Parmesan on top.
- Bake: Cover with foil and bake for 25 minutes. Remove the foil and bake for another 15 minutes, or until golden and bubbling.
- Serve: Let the lasagne rest for 10 minutes before slicing and serving.
