Caponata Siciliana (Sicilian Eggplant Stew)
Ingredients:
- 2 eggplants, diced
- 1 onion, chopped
- 2 celery stalks, sliced
- 400g canned tomatoes
- 100g green olives
- 2 tbsp capers
- 3 tbsp red wine vinegar
- 2 tbsp sugar
- 4 tbsp olive oil
- Salt and pepper, to taste
- Fresh basil, for garnish
Instructions:
- Fry eggplant in olive oil until golden, then drain and set aside.
- Sauté onion and celery, then add olives, capers, and tomatoes. Cook for 10 minutes.
- Add fried eggplant, vinegar, and sugar. Simmer 10 minutes and season with salt and pepper.
- Let cool, garnish with basil, and serve at room temperature.
