The 2018 Voliero Brunello di Montalcino is an understated beauty, offering a charming bouquet of crushed violets, dusty lavender and black currants. The palate is soft-textured and round, with layers of potent red fruits and cooling mineral tones. A slight herbal-peppery note adds complexity toward the close. It finishes savoury and grippy, with fresh acidity maintaining balance as blue and purple inner florals linger. A graceful and finely tuned expression of Brunello. – 94 Points, Vinous Media

Voliero is the personal project of Andrea Cortonesi, owner of the well-regarded Uccelliera estate. Situated on the northern side of Montalcino, Voliero benefits from cooler temperatures and higher altitudes, resulting in a more elegant and lifted style of Brunello. Voliero wines are crafted with minimal intervention, traditional ageing in large oak, and a strong sense of place.

Cinghiale alla Montalcinese (Montalcino-Style Wild Boar)
Ingredients:
- 1kg wild boar, cubed
- 1 onion, chopped
- 2 carrots, diced
- 2 celery stalks, chopped
- 500ml red wine
- 2 bay leaves
- 2 sprigs rosemary
- 400g canned tomatoes
- Olive oil, salt and pepper
Instructions:
- Marinate wild boar in red wine with herbs overnight.
- Drain and brown the meat in olive oil. Set aside.
- Sauté onion, carrot, and celery until soft. Add the meat back in with tomatoes and herbs.
- Simmer for 2–3 hours until tender. Season to taste.
- Serve with crusty bread and a glass of Voliero Brunello di Montalcino for a classic Tuscan pairing.
