Voyager Estate Cabernet Sauvignon 2014

Voyager Estate Cabernet Sauvignon is a Margaret River Cabernet built from the estate's oldest blocks.

Two blocks carry this wine: Old Block, planted in 1978, and Block 12 in the north vineyard, planted in 1995, both remarkably consistent from season to season. Small parcels of Merlot and Petit Verdot join them, the Merlot adding flesh and earth through the middle, the Petit Verdot bringing violet aromatics. Bunches were destemmed to keep berries whole, then fermented separately in open and upright vessels below 25 degrees for fourteen days, with selected parcels left on skins up to twenty-one. Twenty months in tight-grained French oak, half of it new, with racking every three months, preceded blending and a January 2016 bottling.

Blackcurrant and cedar with graphite and dried herb, the tannins firm but resolving with age. Serve at 17 degrees, decanted. Roast lamb, a rib of beef or aged cheddar; a decade in bottle has already done it good and there is more to come.
