Voyager Estate Cabernet Sauvignon 2017

Voyager Estate Cabernet Sauvignon is a Margaret River Cabernet Sauvignon with a small measure of Merlot.

Ninety-four per cent Cabernet Sauvignon with the balance Merlot, hand-picked off Old Block from 1978 and Block 12 from 1995 in the north vineyard. Destemming kept the berries whole where possible, and each parcel fermented separately in open vessels with gentle pumpovers or plunging over thirteen days; some were held on skins up to twenty-five days before pressing. The batches then went into tight-grained French oak, half new, for sixteen months and stayed apart until blending, since the assembly is made only after ageing, when it is clear what each barrel has become.

Cassis and dark plum with cedar, tobacco and a fine dusty tannin structure. Serve at 17 degrees after an hour in a decanter. Roast lamb, steak with peppercorns or a mature cheddar will all suit; there is a good fifteen years in it.
