Voyager Estate Cabernet Sauvignon 2018

Voyager Estate Cabernet Sauvignon is a Margaret River Cabernet drawn from three estate blocks.

A third component enters in 2018: a small parcel of 125 clone off Weightmans Block 5, a notably gravelly site whose fruit brings perfume and a lighter frame. It joins the mainstays, Old Block from 1978 and Block 12 from 1995. Ninety-four per cent Cabernet Sauvignon, the rest Merlot. The grapes were hand-harvested and destemmed with whole berries kept intact, fermented separately over fifteen days with gentle pumpovers or plunging, and some parcels held on skins as long as twenty-six days. Sixteen months in tight-grained French oak followed, with blending left until after maturation.

Blackcurrant, bay leaf and graphite over a firm, fine-grained tannin structure and a long savoury close. Serve at 17 degrees, decanted. Lamb shanks, porterhouse or a wedge of hard sheep's cheese; give it five years if you can.
