Voyager Estate Cabernet Sauvignon 2019

Voyager Estate Cabernet Sauvignon is a classic Margaret River Cabernet aged in tight-grained French oak.

Ninety-five per cent Cabernet Sauvignon here, with Merlot filling the rest, drawn from three blocks: Old Block from 1978, Block 12 from 1995 in the north vineyard, and a small lot of 125 clone off the very gravelly Weightmans Block 5. Hand-harvested and destemmed to retain whole berries, the parcels fermented cool, under 25 degrees, across fifteen days, with regular gentle pumpovers or plunging. They matured apart for sixteen months in tight-grained French oak before blending. Margaret River's maritime climate gives Cabernet a long, even ripening that few Australian regions can match.

Dark berry and cassis with cedar, mint and a graphite edge, the tannins fine and long. Serve at 17 degrees. Good with roast lamb, beef wellington or a mushroom and thyme pie; cellar it confidently for fifteen years.
