Voyager Estate Cabernet Sauvignon 2020

Voyager Estate Cabernet Sauvignon is a Margaret River Cabernet fermented in small vats and concrete.

The Merlot came in by hand on 5 March and the Cabernet followed a few weeks later, off Old Block from 1978 and Block 12 from 1995. Destemming and sorting kept the berries whole. Fermentation was cool and split between small open-top vats and concrete, with plunging or pumpovers twice a day, and parcels sat between seventeen and twenty-three days depending on how they were tracking. Pressing went to tight-grained French oak, forty-seven per cent new, and the blend was assembled in October 2021. Concrete has crept into the reds here in recent years, adding freshness without oak flavour.

Cassis, dark cherry and violet with cedar spice and polished tannin, more approachable young than earlier vintages. Serve at 17 degrees. Lamb rump, beef short rib or a plate of manchego and quince; it will hold fifteen years easily.
