Voyager Estate Coastal Cabernet Sauvignon 2021

Voyager Estate Coastal Cabernet Sauvignon is a medium to full-bodied Margaret River red built for early drinking.

The fruit grows in Stevens Valley, a pocket of gently sloping country close to the township of Margaret River, where red-brown gravel runs about a metre deep over stony clay. The Indian Ocean is near enough that sea breezes moderate the afternoons, which keeps the aromatics lifted and slows sugar accumulation. Berries were destemmed and left whole, then fermented across open vats, static tanks and concrete, held below 27 degrees so colour and tannin came out slowly. After pressing, the wine rested in French oak and concrete before blending and bottling in December 2021. Voyager Estate has farmed this ground since 1978 and now works it organically.

Blackcurrant and mulberry lead, with a dusting of cedar and a fine, chalky tannin close. Serve at 16-18 degrees. Lamb cutlets, a rare steak sandwich or a wedge of aged cheddar will all meet it comfortably.
