Voyager Estate Sparkling Chenin Blanc 2021

Voyager Estate Sparkling Chenin Blanc is a dry sparkling wine made by the traditional method in Margaret River.

Weightmans Block 1 was chosen for this wine because it ripens ahead of the rest of the estate, delivering full flavour while acidity is still high and potential alcohol low, which is what a sparkling base needs. Hand-picked bunches were pressed whole and gently, settled overnight, then fermented in stainless steel tanks. Bottling for the second fermentation came in June, and the wine rested on lees until February 2022 before disgorgement with a light dosage. Margaret River makes very little sparkling wine, and less still from this variety, which is part of what makes it interesting.

Lemon curd, pear skin and a touch of bready lees, dry and taut on the finish. Six to eight degrees. Serve it as an aperitif with olives and jamon, or alongside tempura prawns and a squeeze of lime.
