Voyager Estate The Modern Cabernet Sauvignon 2019

Voyager Estate The Modern Cabernet Sauvignon is an organically grown Cabernet blend from Margaret River.

The Modern sits between the approachable wines and the flagship, with fruit from two plots on gravelly soils farmed under an organic regime; yields are moderate and the wines tend to speak clearly of the site. This release runs 88 per cent Cabernet and 12 per cent Merlot. Parcels were hand-picked and fermented separately across open, static and concrete fermenters, and after sixteen days the wine was pressed to French oak for fourteen months, then blended, filtered and bottled in September 2020. The 2019 season was cool and late, with a mild January delaying harvest; low yields helped, and the reds came in with density and fine tannin.

Cassis and dark plum with cedar and a dried-herb lift, then long, fine-grained tannins. Decant briefly and serve at 17-18 degrees. Roast lamb, beef fillet, or a well-aged cheddar are the obvious company, and the wine will hold for a decade.
